avocado deviled eggs

Avocado deviled eggs combine creamy avocado with classic deviled egg flavors for a fresh, healthy twist on a traditional appetizer. Perfect for parties or a quick snack.

  • 6 large eggs
  • 1 ripe avocado
  • 2 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon fresh lime juice
  • Salt and pepper, to taste
  • Paprika, for garnish
  • Chopped cilantro or chives, for garnish (optional)

Instructions

  1. Place eggs in a single layer in a saucepan and cover with cold water. Bring to a boil over medium-high heat.
  2. Once boiling, cover the pan and remove from heat. Let eggs sit for 10-12 minutes.
  3. Drain hot water and transfer eggs to an ice bath. Cool for 5 minutes, then peel.
  4. Slice eggs in half lengthwise and remove yolks into a bowl.
  5. Mash yolks and avocado together until smooth.
  6. Add mayonnaise, Dijon mustard, lime juice, salt, and pepper; mix well to combine.
  7. Spoon or pipe the avocado mixture back into the egg whites.
  8. Garnish with a sprinkle of paprika and chopped cilantro or chives, if desired.
  9. Serve immediately or chill until ready to serve.

Notes

For extra flavor, add a dash of smoked paprika or a few drops of hot sauce to the filling. Serve chilled for best taste.
