Baked Feta Pasta with Spinach

A creamy and flavorful baked feta pasta dish enhanced with fresh spinach, combining simple ingredients into a comforting and satisfying meal.

  • 200g cherry tomatoes
  • 150g block of feta cheese
  • 200g pasta (penne or fusilli)
  • 3 cups fresh spinach leaves
  • 3 cloves garlic, minced
  • 3 tbsp olive oil
  • Salt and freshly ground black pepper, to taste
  • 1/4 tsp red chili flakes (optional)
  • Fresh basil leaves for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a baking dish, place the cherry tomatoes and minced garlic. Drizzle with 2 tablespoons of olive oil and season with salt, pepper, and chili flakes if using.
  3. Place the block of feta cheese in the center of the dish, surrounded by the tomatoes.
  4. Bake uncovered for 30 minutes, until the tomatoes have burst and the feta is soft and golden.
  5. Meanwhile, cook the pasta according to package instructions until al dente. Drain and set aside.
  6. Remove the baking dish from the oven and stir the roasted tomatoes and melted feta together to form a creamy sauce.
  7. Add the fresh spinach to the sauce; the residual heat will wilt the spinach.
  8. Toss the cooked pasta into the sauce until well coated. Adjust seasoning if needed.
  9. Drizzle with the remaining tablespoon of olive oil and garnish with fresh basil leaves.
  10. Serve immediately and enjoy!

Notes

For extra flavor, add a squeeze of fresh lemon juice before serving or sprinkle with toasted pine nuts for added texture.
