Fluffy Marshmallows

Light and airy homemade marshmallows that are perfect for snacking or adding to your favorite desserts.

Ingredients

  • 3 envelopes unflavored gelatin (about 21g)
  • 1 cup cold water, divided
  • 1 1/2 cups granulated sugar
  • 1 cup light corn syrup
  • 1/4 teaspoon salt
  • 1 tablespoon pure vanilla extract
  • Confectioners’ sugar, for dusting

Instructions

  1. Place gelatin in the bowl of a stand mixer along with 1/2 cup of cold water to bloom.
  2. In a small saucepan, combine granulated sugar, corn syrup, salt, and remaining 1/2 cup water. Cook over medium-high heat until the mixture reaches 240°F (soft-ball stage).
  3. With the mixer on low speed, slowly pour the hot syrup into the bloomed gelatin.
  4. Increase the mixer speed to high and whip until the mixture is very thick, white, and lukewarm, about 10-12 minutes.
  5. Add vanilla extract and mix just to combine.
  6. Dust a 9×13 inch pan with confectioners’ sugar. Pour the marshmallow mixture into the pan and smooth the top.
  7. Let the marshmallows set at room temperature for at least 4 hours or overnight.
  8. Dust the top with more confectioners’ sugar, then cut into squares and coat all sides with additional confectioners’ sugar.

Notes

For extra flavor, try adding a teaspoon of peppermint extract instead of vanilla or dust marshmallows with cocoa powder for a chocolate twist.
