Brussels Sprouts Caesar

This Brussels Sprouts Caesar salad offers a fresh, crunchy twist on the classic Caesar with shaved Brussels sprouts and a creamy, garlicky dressing.

  • 4 cups Brussels sprouts, thinly shaved
  • 1/4 cup grated Parmesan cheese
  • 1 cup Caesar dressing
  • 1/2 cup croutons
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Clean and thinly shave the Brussels sprouts using a mandoline or sharp knife.
  2. In a small bowl, whisk together Caesar dressing, lemon juice, Dijon mustard, minced garlic, and olive oil until well combined.
  3. Place the shaved Brussels sprouts in a large mixing bowl.
  4. Pour the dressing over the Brussels sprouts and toss thoroughly to coat evenly.
  5. Add grated Parmesan cheese and croutons; toss lightly.
  6. Season with salt and freshly ground black pepper to taste.
  7. Serve immediately or chill for 15 minutes for a crisp, cold salad.

Notes

For added protein, top the salad with grilled chicken or crispy bacon bits.
