2 boneless, skinless chicken breasts
2 tablespoons Cajun seasoning
8 oz penne pasta
1 tablespoon olive oil
1 red bell pepper, sliced
1 green bell pepper, sliced
1 cup heavy cream
1 cup grated Parmesan cheese
2 cloves garlic, minced
1/2 cup chicken broth
Salt and pepper to taste
2 tablespoons chopped fresh parsley (optional)
Instructions
Cook the penne pasta according to package instructions until al dente. Drain and set aside.
Slice the chicken breasts into thin strips and season with Cajun seasoning evenly.
Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
In the same skillet, add minced garlic and sliced bell peppers. Sauté for 3-4 minutes until peppers begin to soften.
Pour in the chicken broth and heavy cream, stirring to combine. Bring to a simmer, then reduce heat to low.
Stir in grated Parmesan cheese until the sauce thickens slightly.
Return the cooked chicken to the skillet, add the cooked pasta, and toss everything together until well coated and heated through.
Season with salt and pepper to taste. Garnish with chopped fresh parsley if desired, and serve immediately.
Notes
For a spicier kick, add a pinch of cayenne pepper or serve with extra Cajun seasoning on the side.
