This Cheats Chicken Laksa offers a quick and flavorful take on the classic Malaysian spicy noodle soup, combining tender chicken with creamy coconut milk and aromatic spices.

  • 200g rice noodles
  • 2 chicken breasts, thinly sliced
  • 1 tablespoon vegetable oil
  • 2 tablespoons laksa paste
  • 400ml coconut milk
  • 500ml chicken stock
  • 1 tablespoon fish sauce
  • 1 teaspoon sugar
  • 100g bean sprouts
  • 2 boiled eggs, halved
  • Fresh coriander leaves for garnish
  • Lime wedges for serving
  • Chopped red chili (optional)

Instructions

  1. Cook the rice noodles according to package instructions, drain and set aside.
  2. Heat vegetable oil in a large pot over medium heat, add laksa paste and fry for 2 minutes until fragrant.
  3. Add sliced chicken breasts and cook until no longer pink.
  4. Pour in the coconut milk and chicken stock, stir well and bring to a simmer.
  5. Season with fish sauce and sugar, adjust to taste.
  6. Simmer the soup for 10 minutes until chicken is cooked through and flavors meld.
  7. Divide noodles between serving bowls, ladle hot soup and chicken over noodles.
  8. Top with bean sprouts, boiled egg halves, fresh coriander, and optional chili.
  9. Serve immediately with lime wedges for squeezing over.

Notes

For an extra kick, add a spoonful of sambal chili paste or top with fried shallots to enhance the texture and flavor.
