  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon peppermint extract
  • 1/4 cup powdered sugar (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  3. In a large bowl, cream the softened butter and granulated sugar until light and fluffy.
  4. Add the egg, vanilla extract, and peppermint extract to the butter mixture and beat until combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.
  6. Place the powdered sugar in a shallow bowl. Scoop tablespoon-sized dough balls and roll each ball in powdered sugar until fully coated.
  7. Place the coated dough balls on the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes, until the edges are set but the centers are still soft.
  9. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For an extra minty kick, drizzle melted dark chocolate over cooled crinkles or serve with a scoop of mint chocolate chip ice cream.
