Chocolate Mint Pie

  • 1 ½ cups chocolate cookie crumbs
  • 5 tbsp unsalted butter, melted
  • 1 cup heavy cream
  • 8 oz cream cheese, softened
  • ½ cup granulated sugar
  • 1 tsp peppermint extract
  • 4 oz semi-sweet chocolate, melted
  • Green food coloring (optional)
  • Whipped cream, for garnish
  • Chocolate shavings, for garnish

Instructions

  1. Preheat oven to 350°F (175°C). Combine chocolate cookie crumbs and melted butter in a bowl. Press mixture into a 9-inch pie pan to form the crust.
  2. Bake crust for 8 minutes, then allow to cool completely.
  3. In a mixing bowl, beat cream cheese and sugar until smooth and creamy.
  4. Add peppermint extract and a few drops of green food coloring if desired, mixing well.
  5. In a separate bowl, whip heavy cream until stiff peaks form.
  6. Gently fold whipped cream into the cream cheese mixture until well combined.
  7. Pour half of the filling into the cooled crust, then drizzle melted chocolate over the filling. Pour remaining filling on top and smooth the surface.
  8. Chill the pie in the refrigerator for at least 4 hours or until set.
  9. Before serving, garnish with whipped cream and chocolate shavings.

Notes

For an extra minty kick, add crushed peppermint candies on top before serving.
