cinnamon swirl banana bread

Deliciously moist banana bread enhanced with a warm cinnamon swirl, perfect for breakfast or a cozy snack.

  • 3 ripe bananas, mashed
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon ground cinnamon
  • 1/4 cup granulated sugar (for cinnamon swirl)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  2. In a bowl, whisk together flour, baking soda, and salt. Set aside.
  3. In a large bowl, cream the butter and brown sugar until light and fluffy.
  4. Add eggs one at a time, beating well after each addition, then mix in vanilla and mashed bananas.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. In a small bowl, combine cinnamon and granulated sugar.
  7. Pour half of the batter into the prepared loaf pan. Sprinkle half of the cinnamon sugar mixture over the batter.
  8. Pour the remaining batter over the cinnamon sugar, then sprinkle the remaining cinnamon sugar on top.
  9. Using a knife or skewer, gently swirl the cinnamon sugar through the batter to create a marbled effect.
  10. Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  11. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

For extra moisture, try adding 1/4 cup of sour cream or Greek yogurt to the batter. Serve warm with a pat of butter or cream cheese.
