  • 2 boneless, skinless chicken breasts
  • 8 oz bowtie pasta
  • 2 cups broccoli florets
  • 4 tbsp cowboy butter (see notes)
  • 1 lemon, zested and juiced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • 1/4 cup grated Parmesan cheese
  • 1/4 tsp smoked paprika
  • Fresh parsley, chopped for garnish

Instructions

  1. Cook bowtie pasta according to package instructions until al dente. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt, pepper, and smoked paprika.
  3. Add chicken to skillet and cook 5-7 minutes per side, or until fully cooked and golden brown. Remove chicken and rest.
  4. In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
  5. Add broccoli florets and cook 3-4 minutes until tender-crisp.
  6. Return chicken to skillet. Add cooked pasta, cowboy butter, lemon zest, and lemon juice. Toss everything together until evenly coated and heated through.
  7. Sprinkle grated Parmesan cheese over the dish and garnish with fresh parsley before serving.

Notes

For extra flavor, use homemade cowboy butter with fresh herbs and spices. This dish pairs well with a crisp green salad or warm crusty bread.
