This cranberry goat cheese log is a creamy and tangy appetizer perfect for holiday gatherings or casual entertaining, combining fresh goat cheese with tart cranberries and crunchy nuts.

  • 8 oz fresh goat cheese, softened
  • ½ cup dried cranberries, chopped
  • ¼ cup chopped pecans or walnuts
  • 1 tablespoon honey
  • 1 teaspoon fresh thyme leaves (optional)
  • Crackers or sliced baguette, for serving

Instructions

  1. In a medium bowl, combine softened goat cheese and honey until smooth.
  2. Fold in chopped dried cranberries and thyme leaves, if using.
  3. Transfer the mixture onto a piece of parchment paper and shape into a log about 6 inches long.
  4. Roll the log in the chopped nuts until evenly coated on all sides.
  5. Wrap in parchment paper and refrigerate for at least 1 hour to firm up.
  6. Serve chilled with crackers or sliced baguette.
