Cranberry Orange Scones

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 6 tablespoons cold unsalted butter, cubed
  • 1/2 cup dried cranberries
  • Zest of 1 orange
  • 2/3 cup heavy cream, plus extra for brushing
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons orange juice

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Cut in the cold butter using a pastry cutter or fingers until mixture resembles coarse crumbs.
  4. Stir in the dried cranberries and orange zest.
  5. In a separate bowl, whisk together the heavy cream, egg, vanilla extract, and orange juice.
  6. Pour the wet ingredients into the dry ingredients and gently mix until just combined, being careful not to overwork the dough.
  7. Turn the dough out onto a floured surface and shape into a 7-inch circle about 1 inch thick.
  8. Cut the circle into 8 equal wedges and transfer them to the prepared baking sheet.
  9. Brush the tops with additional heavy cream to help with browning.
  10. Bake for 18-22 minutes or until golden brown and a toothpick inserted into the center comes out clean.
  11. Allow scones to cool slightly before serving.

Notes

For extra flavor, drizzle with a simple orange glaze made from powdered sugar and fresh orange juice after baking.
