  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large egg yolks
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup heavy cream
  • 1/2 cup granulated sugar (for caramelizing)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter and 1 cup granulated sugar until light and fluffy.
  3. Add the egg yolks one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually mix the dry ingredients into the wet ingredients until just combined.
  6. Add the heavy cream and mix until the dough comes together.
  7. Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them 2 inches apart.
  8. Bake for 12-15 minutes, or until the edges are lightly golden. Remove from oven and cool on a wire rack.
  9. Once cooled, sprinkle about 1 teaspoon of granulated sugar evenly over each cookie.
  10. Using a kitchen torch, caramelize the sugar on top of each cookie until it forms a crispy, golden crust similar to creme brulee topping.
  11. Let the cookies sit for a few minutes to allow the caramelized sugar to harden before serving.

Notes

For an extra touch, chill the cookie dough for 30 minutes before baking to enhance texture. Serve with a cup of espresso or vanilla ice cream for a decadent treat.
