Crispy Almond Cookies

  • 1 cup all-purpose flour
  • 1/2 cup almond flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup sliced almonds

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together all-purpose flour, almond flour, baking powder, and salt.
  3. In a separate large bowl, cream the softened butter and sugar until light and fluffy.
  4. Add the egg and vanilla extract to the butter mixture and mix well.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the sliced almonds gently.
  7. Drop tablespoon-sized balls of dough onto the baking sheet, spacing them about 2 inches apart.
  8. Bake for 12-15 minutes, or until edges are golden and cookies are crispy.
  9. Remove from oven and let cookies cool on the sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For extra crunch, lightly toast the almonds before folding them into the dough. Serve with a cup of tea or coffee for a perfect snack.
