Homemade Crockpot Potato Pea Curry

This hearty Crockpot Potato Pea Curry combines tender potatoes and sweet peas simmered in a fragrant blend of spices, making it a comforting and flavorful vegetarian meal perfect for any day.

Ingredients

  • 4 medium potatoes, peeled and diced
  • 1 cup green peas (fresh or frozen)
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 1 can (14 oz) diced tomatoes
  • 1 can (14 oz) coconut milk
  • 2 tbsp curry powder
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp turmeric powder
  • 1/2 tsp chili powder (optional)
  • 1 tbsp vegetable oil
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat oil in a skillet over medium heat. Add onions, garlic, and ginger; sauté until onions are translucent.
  2. Transfer sautéed mix to the crockpot. Add diced potatoes, green peas, diced tomatoes, coconut milk, curry powder, cumin, coriander, turmeric, chili powder, and salt.
  3. Stir to combine all ingredients well.
  4. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until potatoes are tender.
  5. Before serving, garnish with fresh cilantro.
  6. Serve hot with rice or naan bread.

Notes

For a creamier curry, add a tablespoon of yogurt or cream just before serving. This curry also pairs wonderfully with basmati rice or warm naan for a complete meal.
