Peanut Noodles

Peanut Noodles feature a creamy, flavorful peanut sauce tossed with tender noodles, making for a quick and satisfying Asian-inspired dish perfect for lunch or dinner.

  • 8 oz noodles (rice noodles or spaghetti)
  • 1/3 cup creamy peanut butter
  • 3 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp honey or maple syrup
  • 1 tbsp rice vinegar
  • 1 tsp grated fresh ginger
  • 1 garlic clove, minced
  • 1/4 tsp red pepper flakes (optional)
  • 2-3 tbsp warm water
  • 2 green onions, sliced
  • 1/4 cup chopped peanuts (for garnish)
  • Fresh cilantro (for garnish, optional)

Instructions

  1. Cook noodles according to package instructions until al dente. Drain and rinse under cold water. Set aside.
  2. In a medium bowl, whisk together peanut butter, soy sauce, sesame oil, honey, rice vinegar, ginger, garlic, and red pepper flakes until smooth.
  3. Add warm water a tablespoon at a time to thin the sauce to desired consistency.
  4. Toss the cooked noodles with the peanut sauce until evenly coated.
  5. Garnish with sliced green onions, chopped peanuts, and fresh cilantro if desired.
  6. Serve immediately or chill for a refreshing cold peanut noodle salad.

Notes

For extra protein, add grilled chicken or tofu. You can also toss in shredded carrots and cucumber for added crunch and freshness.
