Filipino Chicken Adobo

Filipino Chicken Adobo is a savory and tangy stew made with marinated chicken simmered in vinegar, soy sauce, garlic, and spices, offering a rich and comforting traditional Filipino flavor.

  • 2 lbs chicken thighs, bone-in and skin-on
  • 1/2 cup soy sauce
  • 1/2 cup white vinegar
  • 6 cloves garlic, crushed
  • 1 large onion, sliced
  • 2 bay leaves
  • 1 tsp whole black peppercorns
  • 1 cup water
  • 2 tbsp cooking oil
  • 1 tbsp brown sugar (optional)
  • Salt to taste

Instructions

  1. In a large bowl, combine soy sauce, vinegar, garlic, bay leaves, and peppercorns. Add chicken and marinate for at least 30 minutes.
  2. Heat oil in a large skillet over medium heat. Remove chicken from marinade and brown on all sides, about 5-7 minutes.
  3. Add sliced onions to the skillet and sauté until translucent.
  4. Pour in the marinade and water, bring to a boil, then reduce heat to low. Cover and simmer for 30-40 minutes until chicken is tender.
  5. Add brown sugar if desired and adjust salt to taste. Simmer uncovered for another 5-10 minutes to thicken the sauce.
  6. Remove bay leaves before serving. Serve hot with steamed rice.

Notes

For a richer flavor, marinate the chicken overnight and serve with garlic fried rice for a complete meal.
