Flourless Yogurt Cake

A moist and tender flourless yogurt cake that’s naturally gluten-free and easy to prepare, offering a light texture with a subtle tangy flavor perfect for dessert or teatime.

  • 1 cup Greek yogurt (full-fat)
  • 3 large eggs
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup almond meal
  • 1 teaspoon baking powder
  • Zest of 1 lemon
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch springform pan.
  2. In a large bowl, whisk the eggs and sugar until pale and fluffy.
  3. Mix in the Greek yogurt and vanilla extract until well combined.
  4. Fold in the almond meal, baking powder, lemon zest, and salt gently.
  5. Pour the batter into the prepared pan and smooth the surface.
  6. Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.
  7. Let the cake cool in the pan for 10 minutes, then remove the springform and cool completely on a rack.
  8. Serve plain or dusted with powdered sugar.

Notes

For a richer flavor, serve the cake with fresh berries or a drizzle of honey. It also pairs beautifully with a dollop of whipped cream or mascarpone.
