French Chocolate Flan

A luscious and creamy French Chocolate Flan combining rich cocoa and silky custard, perfect for an elegant dessert.

  • 2 cups whole milk
  • 1 cup heavy cream
  • 4 large eggs
  • 3/4 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 4 oz bittersweet chocolate, finely chopped
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat the oven to 325°F (160°C) and place a large roasting pan in the oven.
  2. In a saucepan, heat the milk and cream over medium heat until just simmering. Remove from heat.
  3. In a bowl, whisk together eggs, sugar, cocoa powder, and salt until smooth.
  4. Slowly pour the warm milk mixture into the egg mixture, whisking constantly to combine.
  5. Add the chopped chocolate and vanilla extract, stirring until chocolate is fully melted and mixture is smooth.
  6. Strain the custard through a fine sieve into a large measuring cup or bowl to remove any lumps.
  7. Pour the custard into individual ramekins or a flan dish.
  8. Place the ramekins in the preheated roasting pan and carefully pour hot water halfway up the sides to create a water bath.
  9. Bake for 40–45 minutes, or until the flan is set but still slightly jiggly in the center.
  10. Remove ramekins from the water bath and cool to room temperature. Chill in the refrigerator for at least 2 hours before serving.

Notes

For an extra touch, serve with a dollop of whipped cream and a sprinkle of shaved dark chocolate.
