French Onion Chicken Bake

French Onion Chicken Bake combines tender chicken breasts with rich caramelized onions and melted cheese for a comforting, flavorful one-pan meal.

  • 4 boneless, skinless chicken breasts
  • 2 large yellow onions, thinly sliced
  • 3 tablespoons butter
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 cup beef broth
  • 1/2 cup shredded Swiss cheese
  • 1/2 cup shredded Gruyère cheese
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add sliced onions and butter, cooking slowly until caramelized, about 20 minutes, stirring occasionally.
  3. Add minced garlic and dried thyme to the onions and cook for an additional minute.
  4. Season the chicken breasts with salt and pepper on both sides.
  5. Place the chicken breasts in a baking dish and pour the caramelized onion mixture evenly over them.
  6. Pour beef broth around the chicken in the baking dish.
  7. Sprinkle Swiss and Gruyère cheeses evenly on top of the onions and chicken.
  8. Bake uncovered in the preheated oven for 25-30 minutes, or until the chicken is cooked through and cheese is bubbly and golden.
  9. Remove from oven and let rest for 5 minutes before serving.
  10. Garnish with chopped fresh parsley if desired and serve warm.

Notes

For extra depth of flavor, add a splash of dry white wine to the onions while caramelizing, or serve with crusty French bread to soak up the delicious juices.
