Garlic Butter Beef Bites with Creamy Mashed Potatoes

  • 1 lb beef sirloin, cut into bite-sized pieces
  • 4 tbsp unsalted butter, divided
  • 4 cloves garlic, minced
  • 1 tsp fresh thyme leaves
  • Salt and freshly ground black pepper, to taste
  • 2 lbs Yukon Gold potatoes, peeled and cubed
  • 1/2 cup heavy cream
  • 1/4 cup whole milk
  • 2 tbsp sour cream
  • 2 tbsp chopped fresh chives (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Add the peeled and cubed potatoes and cook for 15-20 minutes, until fork-tender.
  2. While the potatoes cook, heat 2 tablespoons of butter in a large skillet over medium-high heat.
  3. Add the beef bites, season with salt and pepper, and cook for 3-4 minutes until browned on all sides.
  4. Add minced garlic and thyme to the skillet and cook for an additional 1-2 minutes until fragrant. Stir in the remaining 2 tablespoons of butter and toss to coat the beef. Remove from heat and set aside.
  5. Drain the potatoes and return to the pot. Add heavy cream, whole milk, and sour cream. Mash until smooth and creamy. Season with salt and pepper to taste.
  6. Serve the garlic butter beef bites over the creamy mashed potatoes. Garnish with chopped fresh chives if desired.

For extra richness, try adding a splash of cream cheese to the mashed potatoes or serve with steamed green beans for added color and nutrition.
