This Garlic Butter Chicken Thigh Skillet features juicy, tender chicken thighs cooked in a rich garlic butter sauce, perfect for a quick and flavorful weeknight dinner.

  • 4 bone-in, skin-on chicken thighs
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter, divided
  • 5 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves
  • 1/2 cup chicken broth
  • 1 tablespoon freshly squeezed lemon juice
  • Chopped fresh parsley, for garnish

Instructions

  1. Season the chicken thighs generously with salt and black pepper on both sides.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken thighs, skin side down, and cook until skin is golden brown and crispy, about 6-7 minutes.
  3. Flip the chicken and cook for another 5 minutes. Remove chicken from the skillet and set aside.
  4. Reduce heat to medium, add 2 tablespoons butter to the skillet. Once melted, add minced garlic and thyme leaves, sauté until fragrant, about 1 minute.
  5. Pour in the chicken broth and lemon juice, stirring to combine. Let the sauce simmer for 2-3 minutes.
  6. Return the chicken thighs to the skillet, spoon some sauce over the top, and cook for an additional 5-7 minutes or until the chicken is cooked through.
  7. Add the remaining 2 tablespoons butter to the sauce and stir until melted and combined for a rich finish.
  8. Garnish with chopped fresh parsley and serve hot.

Notes

For extra flavor, serve with steamed vegetables or over creamy mashed potatoes. You can also add a pinch of red pepper flakes to the sauce for a subtle kick.
