Gingerbread Men Cookies

Classic gingerbread men cookies with warm spices and a crisp texture, perfect for holiday baking and festive celebrations.

  • 3 cups all-purpose flour
  • 3/4 cup brown sugar
  • 3/4 cup molasses
  • 1 egg
  • 2 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 tsp vanilla extract
  • Optional: icing and candies for decorating

Instructions

  1. In a large bowl, whisk together the flour, ground ginger, cinnamon, cloves, baking soda, and salt.
  2. In a separate bowl, cream the softened butter and brown sugar until light and fluffy.
  3. Add the egg, molasses, and vanilla extract to the butter mixture and mix well.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until combined to form a dough.
  5. Divide the dough in half, wrap in plastic wrap, and refrigerate for at least 1 hour.
  6. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  7. Roll out the chilled dough on a floured surface to about 1/4-inch thickness.
  8. Use a gingerbread man cookie cutter to cut out shapes and place them on the prepared baking sheets.
  9. Bake for 8–10 minutes or until edges are firm and cookies are lightly browned.
  10. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  11. Decorate with icing and candies as desired once fully cooled.

Notes

For extra flavor, chill the dough overnight before baking; decorate with royal icing for a festive touch.
