Honey Cranberry Chicken Bake with Ricotta Cheese

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh or frozen cranberries
  • 1/4 cup honey
  • 1/2 cup ricotta cheese
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/4 cup chopped fresh parsley (optional, for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, mix honey, olive oil, dried thyme, garlic powder, salt, and pepper.
  3. Place the chicken breasts in a baking dish and brush the honey mixture evenly over them.
  4. Scatter the cranberries around and on top of the chicken.
  5. Dollop ricotta cheese evenly over each chicken breast.
  6. Bake uncovered for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  7. Remove from the oven and let rest for 5 minutes.
  8. Garnish with chopped fresh parsley if desired before serving.

For extra flavor, serve with roasted vegetables or a side of wild rice to complement the sweetness and creaminess of the dish.
