Maple Dijon Roasted Apples Carrots

A delightful blend of sweet roasted apples and tender carrots glazed with a maple Dijon sauce, perfect as a comforting side dish.

Ingredients

  • 3 large carrots, peeled and cut into sticks
  • 2 medium apples, cored and sliced
  • 2 tablespoons pure maple syrup
  • 1 tablespoon Dijon mustard
  • 1 tablespoon olive oil
  • Salt and freshly ground black pepper, to taste
  • 1/2 teaspoon dried thyme (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, whisk together the maple syrup, Dijon mustard, olive oil, salt, pepper, and thyme if using.
  3. Add the carrot sticks and apple slices to the bowl and toss until evenly coated with the glaze.
  4. Spread the mixture out on a baking sheet in a single layer.
  5. Roast in the oven for 25-30 minutes, stirring halfway through, until carrots are tender and apples are caramelized.
  6. Remove from oven and serve warm as a side dish.

Notes

For an extra layer of flavor, sprinkle toasted pecans or walnuts on top before serving.
