Mint Oreo Brownies

Delight in rich, fudgy brownies infused with refreshing mint and crunchy Oreo cookie pieces for a unique, irresistible dessert experience.

  • 1 cup (226g) unsalted butter, melted
  • 2 cups (400g) granulated sugar
  • 4 large eggs
  • 1 tsp mint extract
  • 1 tsp vanilla extract
  • 1 cup (125g) all-purpose flour
  • ¾ cup (75g) unsweetened cocoa powder
  • ½ tsp salt
  • 1 cup (150g) chopped Mint Oreos
  • ½ cup (90g) Oreo cookie crumbs for topping

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking pan and line with parchment paper.
  2. In a large bowl, mix the melted butter and sugar until smooth.
  3. Add eggs one at a time, beating well after each addition.
  4. Stir in the mint and vanilla extracts.
  5. In a separate bowl, sift together flour, cocoa powder, and salt.
  6. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  7. Fold in the chopped Mint Oreos gently.
  8. Pour batter into the prepared pan and spread evenly.
  9. Sprinkle Oreo cookie crumbs evenly over the top.
  10. Bake for 30-35 minutes or until a toothpick inserted near the center comes out with a few moist crumbs.
  11. Cool completely in the pan before cutting into squares.

Notes

For an extra minty kick, drizzle melted white chocolate with a few drops of mint extract over the cooled brownies before serving.
