Delight in these no bake carrot cake bites, packed with wholesome carrots, nuts, and warm spices for a healthy and delicious snack without any oven time.

Ingredients

  • 1 1/2 cups shredded carrots
  • 1 cup pitted Medjool dates
  • 1 cup raw walnuts
  • 1/2 cup rolled oats
  • 1/4 cup shredded coconut
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/2 tsp vanilla extract
  • Pinch of salt
  • Optional: 2 tbsp maple syrup for extra sweetness

Instructions

  1. Place walnuts and rolled oats in a food processor and pulse until finely chopped.
  2. Add shredded carrots, dates, shredded coconut, cinnamon, nutmeg, vanilla extract, salt, and maple syrup (if using) to the processor.
  3. Process until the mixture starts to come together and sticks when pressed between fingers.
  4. Scoop mixture and roll into 1-inch bite-sized balls.
  5. Place bites on a parchment-lined tray and refrigerate for at least 30 minutes to firm up.
  6. Store bites in an airtight container in the fridge for up to one week.

Notes

For a nut-free version, substitute walnuts with pumpkin seeds or sunflower seeds. You can also roll the bites in extra shredded coconut or crushed nuts for added texture.
