One-Pot Veggie Cream Orzo

A creamy, comforting one-pot orzo dish packed with fresh vegetables and rich flavors, perfect for a quick and satisfying meal.

  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup orzo pasta
  • 2 cups vegetable broth
  • 1 cup milk (or plant-based milk)
  • 1 cup chopped zucchini
  • 1/2 cup diced red bell pepper
  • 1/2 cup frozen peas
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and cook until translucent, about 3-4 minutes.
  2. Add minced garlic and sauté for 1 minute until fragrant.
  3. Stir in the orzo pasta and toast for 1-2 minutes, stirring frequently.
  4. Pour in the vegetable broth and milk, then add zucchini and red bell pepper.
  5. Bring to a boil, then reduce heat to low and simmer uncovered, stirring occasionally, until orzo is tender and liquid is mostly absorbed, about 10-12 minutes.
  6. Stir in frozen peas and cook for an additional 2 minutes.
  7. Remove from heat and mix in grated Parmesan cheese. Season with salt and pepper to taste.
  8. Garnish with fresh parsley before serving.

Notes

For extra creaminess, stir in a tablespoon of cream cheese or a splash of heavy cream before serving.
