  • 8 oz tempeh, cubed
  • 1 tablespoon vegetable oil
  • 1 red bell pepper, sliced
  • 1 cup broccoli florets
  • 1 medium carrot, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1/3 cup fresh orange juice
  • 2 tablespoons soy sauce
  • 1 tablespoon maple syrup
  • 1 teaspoon cornstarch mixed with 2 tablespoons water
  • 1 green onion, sliced (for garnish)
  • 1 teaspoon sesame seeds (optional garnish)

Instructions

  1. Heat vegetable oil in a large skillet over medium-high heat.
  2. Add the cubed tempeh and cook until golden brown on all sides, about 5-7 minutes.
  3. Add minced garlic and grated ginger, sauté for 1 minute until fragrant.
  4. Add sliced bell pepper, broccoli florets, and carrots. Stir fry for 4-5 minutes until vegetables are tender-crisp.
  5. In a small bowl, whisk together orange juice, soy sauce, maple syrup, and cornstarch slurry.
  6. Pour the orange glaze over the tempeh and vegetables. Cook and stir until the sauce thickens, about 2-3 minutes.
  7. Remove from heat and garnish with sliced green onion and sesame seeds if desired. Serve hot over rice or noodles.

Notes

For extra protein, serve with steamed edamame or add crushed peanuts on top for crunch.
