Delicious and healthy Roasted Red Pepper Hummus Wraps combine creamy roasted red pepper hummus with fresh veggies for a quick, satisfying meal perfect for lunch or a light dinner.

Ingredients

  • 4 large whole wheat tortillas
  • 1 cup roasted red pepper hummus
  • 1 cup mixed salad greens
  • 1 medium cucumber, thinly sliced
  • 1 medium carrot, shredded
  • 1/2 red onion, thinly sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup feta cheese, crumbled (optional)
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Lay out the whole wheat tortillas flat on a clean surface.
  2. Spread about 1/4 cup of roasted red pepper hummus evenly over each tortilla.
  3. Layer mixed salad greens, cucumber slices, shredded carrot, red onion, and cherry tomatoes over the hummus.
  4. Sprinkle crumbled feta cheese on top if using.
  5. Drizzle each wrap lightly with olive oil and season with salt and pepper.
  6. Roll up the tortillas tightly, folding in the sides as you go to enclose the filling.
  7. Slice each wrap in half diagonally and serve immediately or wrap in foil for later.

Notes

For extra protein, add grilled chicken or chickpeas. These wraps pair perfectly with a side of fresh fruit or crunchy veggie chips.
