A delicious and creamy salmon pasta with sundried tomatoes, combining tender salmon flakes and rich flavors for a satisfying Italian-inspired dinner.

  • 200g pasta (penne or fettuccine)
  • 250g fresh salmon fillet
  • 1/2 cup sundried tomatoes, chopped
  • 2 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 1 small onion, finely chopped
  • 1/4 tsp chili flakes (optional)
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. Heat olive oil in a skillet over medium heat. Add chopped onion and sauté until translucent.
  3. Add minced garlic and cook for 1 minute until fragrant.
  4. Cut the salmon fillet into bite-sized pieces and add to the skillet. Cook until salmon is opaque and cooked through, about 4-5 minutes.
  5. Stir in the chopped sundried tomatoes and chili flakes if using, cooking for another 2 minutes.
  6. Reduce heat to low and pour in the heavy cream, stirring gently to combine.
  7. Add the grated Parmesan cheese and let it melt into the sauce.
  8. Season the sauce with salt and pepper to taste.
  9. Mix the cooked pasta into the skillet, tossing to coat evenly with the sauce.
  10. Remove from heat and garnish with fresh basil leaves before serving.

Notes

For an extra burst of freshness, add a squeeze of lemon juice just before serving or sprinkle with additional Parmesan cheese.
