Sausage and Courgette Pasta

A flavorful and comforting Italian-inspired dish combining savory sausage with fresh courgettes and tender pasta, perfect for a quick weeknight dinner.

  • 300g pasta (penne or fusilli)
  • 2 tablespoons olive oil
  • 3 sausages, casings removed
  • 2 medium courgettes, thinly sliced
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1/2 teaspoon chili flakes (optional)
  • 150ml chicken or vegetable stock
  • 50g grated Parmesan cheese
  • Salt and freshly ground black pepper, to taste
  • Fresh basil or parsley, chopped (for garnish)

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside, reserving a small cup of pasta water.
  2. Heat olive oil in a large skillet over medium heat. Add the sausages and cook, breaking up with a spoon, until browned and cooked through.
  3. Add the onion and garlic to the skillet and sauté for 2-3 minutes until softened.
  4. Stir in the courgettes and chili flakes (if using), cooking for about 5 minutes until the courgettes are tender.
  5. Pour in the stock and bring to a simmer, cooking for another 3 minutes to reduce slightly.
  6. Add the cooked pasta to the skillet, tossing to combine. If needed, add a splash of reserved pasta water to loosen the sauce.
  7. Season with salt and pepper to taste, then sprinkle over the grated Parmesan. Stir well until cheese melts into the sauce.
  8. Remove from heat and garnish with fresh basil or parsley before serving.

Notes

For extra richness, stir in a knob of butter at the end or top with toasted pine nuts for added crunch.
