Ingredients

Scale
  • 1 pound potato gnocchi
  • 12 ounces Italian sausage, casings removed
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (14 ounces) diced tomatoes

Instructions

  1. Bring a large pot of salted water to a boil and cook the gnocchi according to package instructions; drain and set aside.

  4. Stir in the minced garlic and cook for another 30 seconds until fragrant.
  5. Add the diced tomatoes and dried oregano; simmer for 5-7 minutes.
  6. Stir in the heavy cream and cooked gnocchi; cook for an additional 2-3 minutes until heated through.
  7. Remove from heat and mix in the grated Parmesan cheese. Season with salt and pepper to taste.
  8. Garnish with fresh basil leaves and serve warm.

Notes

For extra flavor, add a pinch of red pepper flakes while sautéing the sausage or finish with a drizzle of good-quality olive oil before serving.
