This Slow Cooker Greek Chicken is a flavorful, tender dish infused with Mediterranean herbs and spices, perfect for an easy and healthy dinner.

  • 4 boneless, skinless chicken breasts
  • 3 cloves garlic, minced
  • 1 lemon, sliced
  • 1/4 cup olive oil
  • 1/2 cup chicken broth
  • 2 teaspoons dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and freshly ground black pepper, to taste
  • 1/2 cup kalamata olives, pitted and halved
  • 1/2 cup cherry tomatoes, halved
  • 1 small red onion, thinly sliced
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Place the chicken breasts in the slow cooker.
  2. In a small bowl, combine minced garlic, olive oil, chicken broth, oregano, thyme, rosemary, salt, and pepper.
  3. Pour the mixture over the chicken evenly.
  4. Add lemon slices on top of the chicken, then scatter olives, cherry tomatoes, and red onion around the chicken.
  5. Cover and cook on low for 6 hours or high for 3-4 hours, until the chicken is cooked through and tender.
  6. Garnish with freshly chopped parsley before serving.

Notes

For extra flavor, serve with a side of tzatziki sauce and warm pita bread.
