Slow Cooker Italian Beef Sandwiches

Tender and flavorful Slow Cooker Italian Beef Sandwiches with juicy shredded beef soaked in savory Italian-seasoned au jus, perfect for an easy and satisfying meal.

  • 3 pounds beef chuck roast
  • 1 packet Italian dressing mix
  • 1 cup beef broth
  • 1/2 cup pepperoncini peppers with juice
  • 4 hoagie sandwich rolls
  • Provolone cheese slices (optional)
  • Salt and pepper, to taste

Instructions

  1. Place the beef chuck roast in the slow cooker.
  2. Sprinkle the Italian dressing mix evenly over the beef.
  3. Pour the beef broth and pepperoncini peppers with juice over the roast.
  4. Cover and cook on low for 8 hours, or until the beef is very tender.
  5. Remove the beef from the slow cooker and shred using two forks.
  6. Return shredded beef to the slow cooker and stir into the juices.
  7. To assemble sandwiches, pile the shredded beef onto hoagie rolls and top with provolone slices if desired.
  8. Serve warm, optionally with extra juice for dipping.

Notes

For extra flavor, toast the hoagie rolls before assembling and add giardiniera or sautéed bell peppers for a spicy kick.
