  • 1 box (15.25 oz) strawberry cake mix
  • 1/3 cup vegetable oil
  • 2 large eggs
  • 1/2 cup white chocolate chips (optional)
  • 1/2 cup freeze-dried strawberries, crushed (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the strawberry cake mix, vegetable oil, and eggs. Stir until the mixture is well blended.
  3. Fold in the white chocolate chips and crushed freeze-dried strawberries, if using, for extra flavor and texture.
  4. Using a tablespoon or cookie scoop, drop dough balls onto the prepared baking sheet, spacing them about 2 inches apart.
  5. Bake for 10-12 minutes or until the edges are set and lightly golden.
  6. Remove from oven and allow cookies to cool on the pan for 5 minutes before transferring to a wire rack to cool completely.

Notes

For a more intense strawberry flavor, sprinkle some extra freeze-dried strawberry powder on top before baking or add a drizzle of white chocolate after cookies have cooled.
