Strawberry Sugar Cookies

Delight in these soft and chewy strawberry sugar cookies bursting with real strawberry flavor, perfect for a sweet treat any time of day.

  • 2 ¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 ½ cups granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • ½ cup pureed fresh strawberries
  • ½ cup powdered sugar (for rolling)

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, and salt.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the egg, vanilla extract, and strawberry puree until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until incorporated.
  6. Shape the dough into 1-inch balls and roll each in powdered sugar to coat.
  7. Place balls 2 inches apart on the prepared baking sheets.
  8. Bake for 10-12 minutes, or until edges are lightly golden.
  9. Allow cookies to cool on baking sheets for 5 minutes before transferring to wire racks to cool completely.

Notes

For extra strawberry flavor, add finely chopped freeze-dried strawberries to the dough before baking.
