Sun-Dried Tomato Gnocchi

Delight in tender gnocchi infused with the rich, tangy flavor of sun-dried tomatoes, perfect for a comforting Italian-inspired meal.

  • 500g potato gnocchi
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup fresh basil leaves, chopped
  • 1/2 cup heavy cream
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Bring a large pot of salted water to a boil and cook the gnocchi according to package instructions until they float to the surface. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Add the chopped sun-dried tomatoes to the skillet and cook for 2-3 minutes to release their flavors.
  4. Pour in the heavy cream and stir to combine. Let it simmer for 3-4 minutes until slightly thickened.
  5. Add the cooked gnocchi into the skillet and toss gently to coat in the sauce.
  6. Season with salt and freshly ground black pepper to taste.
  7. Remove from heat and sprinkle with grated Parmesan cheese and chopped fresh basil before serving.

Notes

For an extra burst of flavor, garnish with toasted pine nuts or a drizzle of balsamic glaze.
