  • 1 cup dried cranberries
  • 1/2 cup white chocolate chips
  • 1 cup rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar, packed
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. In a large bowl, combine the rolled oats, flour, brown sugar, baking soda, and salt.
  3. In another bowl, whisk together the melted butter, egg, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Fold in the dried cranberries and white chocolate chips evenly.
  6. Press the mixture firmly into the prepared baking pan, spreading evenly.
  7. Bake for 20-25 minutes or until the edges are golden brown and a toothpick inserted in the center comes out clean.
  8. Allow the bars to cool completely in the pan before lifting out and cutting into squares.

Notes

For an extra festive touch, drizzle melted white chocolate on top once the bars have cooled, or add chopped nuts for crunch.
