  • 1 tablespoon fresh thyme leaves (optional)
  • 1 tablespoon chopped fresh parsley (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss the sweet potato rounds with olive oil, salt, and black pepper until evenly coated.
  3. Arrange the sweet potato slices in a single layer on the prepared baking sheet.
  4. Bake for 20-25 minutes or until tender and slightly crisp around the edges.
  5. While the sweet potatoes bake, mix the crumbled feta cheese with honey and fresh thyme leaves in a small bowl.
