This Teriyaki Salmon Avocado Rice combines tender, glazed salmon with creamy avocado and fluffy rice for a delicious and nutritious meal that’s quick to prepare.

Ingredients

  • 2 salmon fillets (6 oz each)
  • 1/4 cup teriyaki sauce
  • 1 cup jasmine or sushi rice
  • 1 ripe avocado, sliced
  • 1 tablespoon sesame oil
  • 2 green onions, chopped
  • 1 teaspoon toasted sesame seeds
  • Salt and pepper to taste
  • 1 tablespoon soy sauce (optional)

Instructions

  1. Cook the rice according to package instructions and set aside.
  2. Heat the sesame oil in a skillet over medium heat.
  3. Season the salmon fillets with salt and pepper.
  4. Place salmon in the skillet, skin-side down, and cook for 4-5 minutes until crispy.
  5. Flip the salmon and pour teriyaki sauce over the fillets. Cook for another 3-4 minutes, basting occasionally, until salmon is cooked through and glazed.
  6. Remove salmon from heat.
  7. In serving bowls, layer cooked rice and top with sliced avocado and teriyaki salmon.
  8. Garnish with chopped green onions and toasted sesame seeds.
  9. Drizzle with soy sauce if desired and serve immediately.

Notes

For extra flavor, add a sprinkle of chili flakes or a squeeze of fresh lime juice on top before serving.
