Tomato Basil Noodle Soup

A comforting and flavorful Tomato Basil Noodle Soup combining fresh tomatoes, aromatic basil, and tender noodles for a wholesome meal perfect any day.

Ingredients

  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups fresh tomatoes, chopped (or canned diced tomatoes)
  • 4 cups vegetable broth
  • 1 teaspoon sugar
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper
  • 1 cup egg noodles
  • 1/2 cup fresh basil leaves, chopped
  • Optional: grated Parmesan cheese for serving

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic; sauté until softened, about 3-4 minutes.
  2. Add chopped tomatoes and cook for 5 minutes until they start breaking down.
  3. Pour in vegetable broth, then stir in sugar, salt, and black pepper. Bring to a boil.
  4. Add egg noodles and cook according to package instructions, about 6-8 minutes, until tender.
  5. Stir in fresh basil leaves just before serving.
  6. Ladle soup into bowls and garnish with grated Parmesan cheese if desired. Serve hot.

Notes

For a richer flavor, add a splash of cream or a dollop of pesto before serving.
