  • 1 cup carrots, diced
  • 1 cup frozen peas
  • 1/2 cup celery, diced
  • 1/3 cup unsalted butter
  • 1/3 cup all-purpose flour
  • 2 cups chicken broth
  • 1 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

  4. Gradually whisk in chicken broth and milk, cooking until mixture thickens and bubbles.
  5. Add turkey, peas, salt, pepper, and thyme. Stir to combine and remove from heat.
  6. Pour filling into a 9-inch pie dish or casserole.
  7. Drop biscuit dough by spoonfuls evenly over the filling.
  8. Bake for 20-25 minutes or until biscuits are golden brown and filling is bubbly.
  9. Sprinkle with fresh parsley before serving, if desired.

Notes

For extra flavor, try adding a splash of white wine to the filling or use cheddar cheese biscuits for a tasty twist.
