Whipped Shortbread Cookies

Light and buttery whipped shortbread cookies that melt in your mouth, perfect for any occasion or a simple sweet treat.

  • 1/2 cup powdered sugar
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. In a large bowl, beat the softened butter with an electric mixer until creamy and light.
  2. Add powdered sugar and vanilla extract, then continue beating until the mixture is fluffy.
  3. Gradually add the flour and salt, mixing on low speed until just combined into a soft dough.
  4. Shape the dough into a log, wrap in plastic wrap, and refrigerate for at least 1 hour.
  5. Preheat the oven to 325°F (163°C). Slice the dough into 1/4-inch thick cookies and place them on a baking sheet lined with parchment paper.
  6. Bake for 15-18 minutes, until the edges are lightly golden.
  7. Let the cookies cool completely on a wire rack before serving.

Notes

For a festive touch, sprinkle cookies with colored sugar before baking or dip half of each cookie in melted chocolate once cooled.
