This vibrant winter salad combines crisp greens with zesty homemade salsa and crunchy snowflake tortilla chips for a refreshing and satisfying meal or snack.

Ingredients

  • 4 cups mixed winter greens (kale, spinach, arugula)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup diced cucumber
  • 1/4 cup finely chopped red onion
  • 1 avocado, diced
  • 1/2 cup fresh homemade salsa (see instructions)
  • 1 cup snowflake tortilla chips
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lime juice
  • Salt and pepper, to taste
  • For homemade salsa:
    • 3 ripe tomatoes, chopped
    • 1/4 cup finely chopped white onion
    • 1 jalapeño, seeded and chopped
    • 1/4 cup chopped fresh cilantro
    • 1 clove garlic, minced
    • 1 tablespoon lime juice
    • Salt to taste

Instructions

  1. Prepare the homemade salsa: Combine chopped tomatoes, onion, jalapeño, cilantro, garlic, lime juice, and salt in a bowl. Mix well and let sit for 10 minutes to blend flavors.
  2. In a large salad bowl, combine the mixed winter greens, cherry tomatoes, cucumber, red onion, and avocado.
  3. Drizzle olive oil and lime juice over the salad and toss gently to coat.
  4. Add the fresh homemade salsa to the salad and toss lightly to combine.
  5. Just before serving, top the salad with snowflake tortilla chips to maintain their crunch.
  6. Season with salt and pepper to taste and serve immediately.

Notes

For added protein, top the salad with grilled chicken or black beans. Serve with extra lime wedges for a zesty finish.
